Pavlova (2)

This tiered delight has to be one of my favourites. I love the sharp tang of all those those delicious summer fruit berries, sitting amidst heaps of fresh cream, then sandwiched between melt in your mouth meringue, the taste is simply divine – a marriage of flavours and textures made in heaven! You may choose any fresh seasonal fruits to make your pavlova, it just so happens that strawberries and raspberries are a particular favourite of mine, peaches, nectarines and kiwi fruit also work well. The pavlova would make a perfect alternative to a traditional cake and be absolutely perfect for any summer wedding.
