Some months ago we posted our deliciously popular microwave lemon curd recipe. Today we thought we would share this mouthwatering quick & easy cheesecake recipe with you, featuring the lemon curd as a principle ingredient. The good news about this recipe is that once you’ve collected the ingredients together, it only takes 10 minutes to make. It is a fabulous dessert option when entertaining family or friends.
Luscious Lemon Cheesecake Serves: 8
Makes: 20cm (8in) cheesecake – line the base with baking parchement

100g ginger biscuits, crushed
50g butter, melted
2 x 250g tubs mascarpone or full fat cream cheese
325g homemade lemon curd
Juice of 1 small lemon
Fresh summer fruits e.g. strawberries, raspberries and blueberries, to decorate
Icing sugar, to dust
- Mix the biscuits with the butter in a bowl, then press into the base of the tin (but not up the sides)
- Put the mascarpone (or cream cheese), lemon curd, and lemon juice in a bowl and beat with a spatula until smooth
- Spoon on to the biscuit base and level the top. Chill in the fridge for at least 4 hours, but up to 24 hours to firm up
- To serve, remove the cheesecake from the tin, peel off the baking parchment, and arrange on a platter. Decorate with the fruit and dust with icing sugar.
